蛹虫草复合饮料的研制

摘要: 以蛹虫草为原料,经过深层发酵得到发酵液,搭配红枣、枸杞、金银花浸提液,通过L9(34)正交设计获得最佳搭配:100 mL虫草发酵液,50 mL红枣浸提汁,15 mL枸杞浸提液,5 mL金银花萃取液。再经过正交处理软件ⅡV3.1优化甜味剂、酸味剂和稳定剂的添加量,结果为每100 mL饮料辅助添加蔗糖5 g、柠檬酸0.25 g、蜂蜜2.5 mL,CMC-Na 0.3 g,黄原胶0.02 g,果胶0.1 g时饮料酸甜可口、营养丰富、香气协调。经HPLC检测,饮料中虫草素含量为138.4 μgmL,腺苷含量为52.2 μgmL,多糖、蛋白质含量分别为9.79、13.13 mgmL。微生物指标符合国家标准。Abstract: Submerged fermentation liquid of Cordyceps militaris was used as raw material,tie-in Chinese wolfberry,red jujube,honeysuckle through orthogonal experiment optimizing to explore compound drinks of Chinese caterpillar fungus′optimal collocation.The result is caterpillar fungus fermented liquid 100 mL,soaks raises red jujube juice 50 mL,soaks raises Chinese wolfberry liquid 15 mL,honeysuckle extract 5 mL,every 100 mL drinks add auxiliary sugar 5 g auxiliary,and citric acid 0.25 g,honey 2.5 mL,CMC-Na 0.3 g,xanthan gum 0.02 g,pectin 0.1 g getting brown when bright,sour and sweet and tasty,rich nutrition functional health drink.The drink was detected by High Performance Liquid Chromatography,the countent of cordycepin and adenosine in the drink was 138.4 μgmL and 52.2 μgmL,respectively.Polysaccharide content and protein content of the drink are respectively 9.79 mgmL,13.13 mgmL.Microbiology indicators meet national standards.
