果蔬贮藏保鲜技术现状与展望

Current Situation and Prospect of Fruit and Vegetable Storage and Fresh-keeping Technology

  • 摘要: 该文以现今较为普及的果蔬贮藏保鲜技术分类为切入点,较为系统地分析了我国果蔬贮藏保鲜技术中存在的优势与劣势、机遇与挑战,并以此为依据提出了以果蔬冰温保鲜技术、鲜切果蔬保鲜技术和果蔬一次性气调保鲜技术等技术为主的研究现状与发展趋势。

     

    Abstract: Advantages,disadvantages,opportunities and challenges of fruit and vegetable storage and preservation technology in China were systematically analyzed based on popular classification of fruit and vegetable storage and preservation technology.On this basis,the research status and development trend of fruit and vegetable ice-temperature preservation technology,fresh-cut fruit and vegetable preservation technology,and disposable controlled atmosphere preservation technology were put forward.
