Abstract: Advantages，disadvantages，opportunities and challenges of fruit and vegetable storage and preservation technology in China were systematically analyzed based on popular classification of fruit and vegetable storage and preservation technology.On this basis，the research status and development trend of fruit and vegetable ice-temperature preservation technology，fresh-cut fruit and vegetable preservation technology，and disposable controlled atmosphere preservation technology were put forward.
