Application of Pulsed Electric Field Technology in Food Processing and Preservation

  • Pulsed electric field(PEF)processing is a new non-thermal processing technology with electroporation effect on cells,which has a wide application value in food processing and preservation.Progress of pulsed electric field in extraction of natural active components,sterilization,degradation of harmful substances,passivation of enzymes,improvement of food quality,drying and other aspects,were summarized.Relevant literature was reviewed,problems and prospects of pulsed electric field were prospected,which provided reference for industrial application of pulsed electric field.
