Abstract
The soybean embryo are the by-products in soybean processing,the soybean embryo oil is extracted from them,the oil contains high content of unsaturated fatty acid,Vitamin E,phytosterol,and other activity substance. This thesis focuses on utilizing the soybean embryo and developing the soybean embryo oil with high content of Vitamin E and other functional ingredients,and then the oil is made to microencapsulations,which not only makes Vitamin E the oil represent its rich nutrition,but also makes the fatty acid and Vitamin E more stable.In this thesis,we mainly study the technics of extracting the soybean germ oil,and its refining and microencapsulation.The results can offer a valuable reference on rational and effective utilization of soybean germs,and also have definite theoretical and practical significances.
