Abstract
Cavitation effect,mechanical effect and heating effect are physical mechanism of ultrasound.Ultrasound aided extraction,ultrasonic liquidliquid extraction,ultrasonic sterilization,ultrasonic emulsification and ultrasonic crystallization are widely used in food industry.This paper reviewed the application situation and prospects of ultrasound technology in new resources food industry.
