  • Cavitation effect,mechanical effect and heating effect are physical mechanism of ultrasound.Ultrasound aided extraction,ultrasonic liquidliquid extraction,ultrasonic sterilization,ultrasonic emulsification and ultrasonic crystallization are widely used in food industry.This paper reviewed the application situation and prospects of ultrasound technology in new resources food industry.
