Extraction and Antioxidative Activity of Polysaccharide in Pleurotus eryngii

Optimal parameters of polysaccharide extraction from fresh Pleurotus eryngii using the solvent extract were obtained by single factor experiments and orthogonal teats.The optimum conditions were temperature 70 ℃，extract time 1.5 h，ethanol concentration 75%.According to the analysis of extract，the yield of polysaccharide from fresh Pleurotus eryngii was 2.33%.Antioxidant activity about polysaccharide from Pleurotus eryngii was measured. The clearance rate of hydroxyl radical scavenging about polysaccharide from Pleurotus eryngii was 35.76%.
