Optimization of Reparation for Antioxidant Peptide from Potato Protein Powder by Protamex

  • Antioxidant peptide was prepared by hydrolyzing potato protein powder with Protamex.With total antioxidant capacity as the indicator,the optimal technology was performed by means of Box-Behnken design.Results indicated that the optimal prepared technical parameters were obtained as follows:substrate concentration of 5%,enzyme dosage 4 000 Ug,enzymolysis time 165 min.Under the above mentioned conditions,the total antioxidant capacity was 0.751 mmolL.Experiment result was consistent with the prediction result.
