Optimization of Reparation for Antioxidant Peptide from Potato Protein Powder by Protamex

Abstract
Antioxidant peptide was prepared by hydrolyzing potato protein powder with Protamex.With total antioxidant capacity as the indicator,the optimal technology was performed by means of Box-Behnken design.Results indicated that the optimal prepared technical parameters were obtained as follows:substrate concentration of 5%,enzyme dosage 4 000 Ug,enzymolysis time 165 min.Under the above mentioned conditions,the total antioxidant capacity was 0.751 mmolL.Experiment result was consistent with the prediction result.
