Character of Lipases and its Applications in Agricultural and Sideline Products
Lipase is a group of biocatalysts for wide and potential application.It could catalyze hydrolysis and synthesis of esters formed from glycerol and long-chain fatty acids.With the rapid development of enzyme technology，microbial lipase has also attracted more and more attention.Its source，structure，character and application in agricultural and sideline products were discussed.
