Texture Regulation of Extrusion Body Based on L-α-PC Forced Fusion Starch Molecular Behavior

  • Around to international research hot and difficult problems of eating quality for re-body design dominant starch,with rice starch as the structure of assembled objects,a twin screw extruder as a reactor,soybean L-α-phosphatidylcholine(L-α-PC)as a texture modifier,using quadratic orthogonal rotation combination test and response surface model,L-α-phosphatidylcholine content,moisture content of materials,sleeve heating temperature and screw speed as input variable,recombinant meters disintegration as response variable,squeeze mathematical model was established to be used in recombinant production of rice.It could provide reference for texture regulatory of industrial production of recombinant rice to meet the needs of special populations using recombinant squeeze rice.When L-α-PC content was 0.47%,moisture content of materials was 31.5%,sleeve heating temperature was 76.8 ℃,and screw speed was 163.9 r/min,disintegration value was 1 235cp.
