Processing Technology and Texture Characteristics of Embryo Rice

Southern rice texture characteristics were studied by textural apparatus，and effect of rice milling pressure on embryo rate，protein and texture parameters in process of producing embryo rice was analyzed.Results showed that embryo retention rate of embryo rice decreased with increase of rice outlet pressure，texture parameters of embryo rice showed a trend of first decline and then rise along with increase of outlet pressure of rice milling.Research results have some reference value for production process control of embryo remaining rice.
