Analysis of Texture Properties in Cerasus humilis Based on Puncture Test

  • Quality evaluation after current picking of Cerasus humilis has not been established.Basic physical parameters of five kinds of Cerasus humilis were determined and effects of different varieties and puncture orientation on texture characteristics of fruit puncture were studied.Editing force-time puncture analysis method was established to establish four puncture parameters to characterize fruit texture.The analysis showed that basic physical parameters of different varieties were significantly different (P<0.05); the variety and puncture orientation had significant effects on peel hardness,peel rupture depth,peel toughness and average hardness of pulp (P<0.01).Main affecting factors were puncture orientation and variety.Results indicated that there were differences in texture characteristics between Cerasus humilis varieties,which enriched quality evaluation of Cerasus humilis,also provided technical reference for mechanical harvesting and machining of Cerasus humilis.
