Application of Solid Fat Index Measurement in Experimental Teaching

Determination method of solid fat index（SFI）of oils and fats was described，experimental process of using solid fat index curve to judge application range of raw oil was introduced，and SFI was changed by adding emulsifier，so as to broaden application range of oil.This experiment is widely used in field of oil industry and belongs to engineering experiment.It is a useful supplement to existing experimental courses of food science and engineering.The application of this experiment in undergraduate experimental teaching is helpful for students to master basic industrial operation skills，consolidate and deepen theoretical knowledge，and further cultivate students' ability to analyze and solve engineering practical problems and innovative thinking.
