Research Status of Functional Proteins and Polypeptides in Egg

Egg is a rich source of functional proteins and polypeptides in human diet.It is very good for human health.Research status of egg proteins and polypeptides were reviewed from three aspects: composition of eggs，biological active ingredients，protein separation and polypeptide preparation，to provide reference for further research of functional proteins and polypeptides，make full use of China′s rich resources of eggs and speed up development of egg industry.
