Research Progress of Preservation Technology of Gastrodia elata

Gastrodia elata is a famous medicinal and edible homologous plants.It is rich in polysaccharides，flavones，phenols and other compounds，and has various functions.Fresh Gastrodia elata is favored by people because of its good taste，unique flavor，rich nutrition，remarkable health care function and convenient eating and processing.However，the harvested Gastrodia elata is difficult to preserve because of its high water content，strong enzyme activity and high respiratory intensity.The sensory quality of dried Gastrodia elata is poor，quality loss is serious，it is difficult to maintain original flavor，and it is difficult to eat and use it as medicine.Difficulty of fresh-keeping and storage technology has become bottleneck of fresh Gastrodia elata in the market.In order to provide reference for research on preservation and storage technology of Gastrodia elata and promote sustainable development of Gastrodia elata industry，present situation and existing problems of Gastrodia elata preservation research were summarized.
