Abstract: As the fourth largest staple food crop in China，potato has important strategic significance to ensure national food security.China is a big potato planting country，but not a strong potato industry country.Compared with developed countries in the world，there are still gaps and deficiencies in varieties，processing，products and equipment.The overall situation，existing problems and shortcomings of China′s potato processing industry were introduced，and specific suggestions were put forward from aspects of scientific and technological innovation and industrial development.
