Abstract: Application and significance of food rapid detection technology in food safety assurance of catering services was explored． Application of food rapid detection technology to ensure food safety has significant effects on reducing food safety risks, and is beneficial to promoting and improving management level of catering service units． Through actual application effect of food rapid detection technology in food safety assurance of catering service, role of food rapid detection technology in catering supervision was explored and demonstrated, and a standardized supervision mode, that was accessible and replicable, was formed． Food rapid detection technology could further promote development of food safety supervision to a more scientific and modern direction．
