Abstract:
Cold plasma is an effective method for degrading fungal toxins in agricultural products, but degradation process is influenced by parameters of cold plasma process.To accurately predict degradation process of ochratoxin A in raisins, a computational model was developed using finite element software COMSOL.This model considered process parameters of plasma, including discharge frequency, size of reaction chamber, and shape of food matrix, to predict degradation process of ochratoxin A in raisins.Results showed that model and experimental outcomes were highly consistent.As discharge frequency increases, half-life of ochratoxin A degradation significantly decreased.When discharge frequency increased from 0.6 to 1.2 kHz, half-life was reduced to 57% of original duration.Raisins shape and reactor size had a minor impact on degradation process.Results confirmed that this model was a reliable tool for optimizing conditions of cold plasma treatment, providing a theoretical basis for industrial application of plasma degradation of fungal toxins in agricultural products.
