Research progress and prospect of non-metallic foreign body detection in staple foods and dishes

  • 摘要: 食品安全是全球关注的热点,而主食和菜肴中的非金属异物检测则是食品安全中的关键难题。由于塑料、玻璃、木屑等非金属异物在食品的原料生产、加工和运输各环节中的广泛分布,传统的金属探测器难以识别这些异物。系统回顾主食和菜肴中非金属异物的来源及其特点,分析光学检测、X射线检测、近红外光谱、超声波及人工智能等主要检测技术的原理、应用现状及优缺点。针对当前检测技术的局限性,探讨智能化与自动化检测、多技术融合、在线监测与溯源等未来发展方向,为提升食品安全保障提供技术参考。

     

    Abstract: Food safety has been a global concern, with detecting non-metallic foreign bodies in staple foods and dishes is a crucial challenge in food safety.Non-metallic foreign bodies such as plastics, glass, and wood chips are widely present in production, processing, and transportation, making it difficult for traditional metal detectors to detect.Sources and characteristics of non-metallic foreign bodies in staple foods and dishes were systematically reviewed.Principles, applications status, advantages and limitations of mainstream detection techniques such as optical detection, X-ray detection, near-infrared spectroscopy, ultrasonic detection, and artificial intelligence were analyzed.Additionally, in view of limitations of current detection techniques, future development directions of intelligent automation detection, multi-technology integration, real-time monitoring, and traceability systems were discussed, which provided technical insights for enhancing food safety assurance.
