Abstract:
Highland barley tsampa is one of traditional staple foods of Tibetan people, holding a central position in their daily diet.It embodies dietary habits and traditions accumulated over thousands of years, serving as a typical representative of ethnic food culture.Key steps in tsampa production are ripening and grinding highland barley.There are two methods: traditional manual operation and mechanical processing.Traditional manual operation has a unique flavor profile that is highly favored by consumers, but labor costs are high and efficiency is low.Although mechanical processing has improved production efficiency to some extent, flavor and texture are inferior to traditional manual operation, resulting in limited adoption.Therefore, it is imperative to conduct research on key technologies for mechanized processing of highland barley tsampa to enhance industrial mechanization level.Production techniques and methods for highland barley tsampa were clarified, with an main problems analysis in mechanizedl processing.Targeted development suggestions were proposed, such as accelerating technological and equipment research, strengthening integration of machinery and techniques, and enhancing standardization system construction, and promoting application and dissemination, to promote high-quality development in tsampa processing industry.
