Abstract: With improvement of life quality and diet structure，demand for convenient and fast food is getting higher and higher.Freeze-dried carrot is a kind of high quality snack with rich nutritional value.Process of vacuum freeze-drying of carrot slices was introduced，test of vacuum freeze-drying for carrot slices was carried out，and appropriate process parameters were obtained，that could provide a theoretical reference for production of carrot freeze-dried snacks with good taste，shape and nutrition.
