Vacuum Freeze-drying Test for Carrot

  • 摘要: 随着生活质量的提高和饮食结构的改善,人们对方便快捷食品的要求越来越高,冻干胡萝卜是一种质量上乘,具有丰富营养价值的休闲小食品。介绍了胡萝卜片真空冷冻干燥技术工艺,开展了胡萝卜片真空冷冻干燥试验,得到了适宜的工艺参数,可为更好地生产出色、香、味、形和营养成分俱佳的胡萝卜冻干小食品提供理论参考。

     

    Abstract: With improvement of life quality and diet structure,demand for convenient and fast food is getting higher and higher.Freeze-dried carrot is a kind of high quality snack with rich nutritional value.Process of vacuum freeze-drying of carrot slices was introduced,test of vacuum freeze-drying for carrot slices was carried out,and appropriate process parameters were obtained,that could provide a theoretical reference for production of carrot freeze-dried snacks with good taste,shape and nutrition.
