摘要: 超高压处理是食品加工中的新兴方法。它对食品的营养价值、色泽和天然风味具有独特的保护效果,具有巨大的应用潜力。该文对超高压技术在食品加工领域中的应用进行了简要介绍。Abstract: Ultrahigh pressure treatment is an emerging method in food processing.It has unique protection effect on food nutrition value,colour & lustre and natural flavor.It has great potential application.In this paper,application of ultrahigh pressure technology in food processing field is briefly introduced.
