超声技术在新资源食品行业中的应用
Application of Ultrasound Technology in New Resources Food Industry

摘要: 超声波具有空化作用、机械效应以及热效应等物理机制。超声辅助提取、超声液液萃取、超声灭菌、超声乳化以及超声结晶等已广泛应用于食品行业。该文综述了超声波技术在新资源食品行业中的应用现状及前景。Abstract: Cavitation effect,mechanical effect and heating effect are physical mechanism of ultrasound.Ultrasound aided extraction,ultrasonic liquidliquid extraction,ultrasonic sterilization,ultrasonic emulsification and ultrasonic crystallization are widely used in food industry.This paper reviewed the application situation and prospects of ultrasound technology in new resources food industry.
