太赫兹波光谱成像技术在肉制品检测中的应用

Application of Terahertz Wave Spectral Imaging Technique in Meat Detection

  • 摘要: 我国是农产品大国,但由于商品产后处理化水平不高造成出口比例低。生鲜肉制品的快速、准确、在线及无损检测在食品安全分析以及农产品检测中占有重要地位。太赫兹(THz)波作为一项新的、快速发展的技术在很多领域受到广泛关注。当食品安全检测技术面临巨大的机遇与挑战时,太赫兹波光谱成像技术具有高信噪比和动态范围宽等诸多特点,能够获得肉制品在THz波段的时域频域信息,不但能够辨别物体的形貌而且能够鉴别内部组成部分,因此在食品安全检测领域有独特的优势。简要介绍了太赫兹波概念、特点和与其他检测方法的对比,并讨论了在肉制品检测中的研究前景及受限因素。

     

    Abstract: China is a big country of agricultural products,but due to goods postpartum processing level is not high,export ratio is low.Fast,accurate,on-line,non-destructive testing of fresh meat plays an important role in food security analysis and testing of agricultural products.Terahertz wave as a new,rapid development of technology in many areas is widespread concern.When food security detection technology facing tremendous opportunities and challenges,terahertz wave spectral imaging technology with high signal-to-noise ratio,wide dynamic range and many other features,is possible to get the meat in THz band time-domain frequency domain information,and will not only be able to identify morphology of object,but also be able to identify internal part.It has unique advantages in the field of food safety testing.Concept and characteristics of terahertz wave and comparison with other detection methods were introduced.Research prospects and limited factors in the detection of meat were discussed.
