Formaldehyde in Foods and its Preventive Measures

  • 摘要: 随着生活水平的不断提高,人们越来越关注健康问题。近年来,用甲醛浸泡水发品及在食品中违禁使用吊白块等案件的发生,使得甲醛问题变成世界关注的焦点。目前,关于食品中的甲醛问题,国家还没有对其制定统一的卫生标准。此外,再加上甲醛的来源比较广泛,使得其食用安全性更加引起大众的担忧。甲醛是一种致癌和致畸物质,正确认识食品中的甲醛是非常重要的。针对食品中甲醛来源的几个方面,可以通过控制食品中的内源性甲醛,加强食品卫生监督管理,减少环境污染等来控制食品中的甲醛含量。该文对食品中甲醛的危害、来源及预防措施进行了综述,以期为人们更好地了解食品中的甲醛及其预防提供参考。

     

    Abstract: With the continuous improvement of living standard,people have paid more and more attention to health problems.In recent years,cases about food products soaked with formaldehyde and adding substances banned in food use,such as formaldehyde sodium bisulfate,made formaldehyde problems become focus of world's attention.At present,countries have yet formulated unified health standards about problem of formaldehyde in foods.In addition,combined with source of formaldehyde more extensive,its edible safety made more concern among the public.Formaldehyde is a carcinogenic and teratogenic substance.It is very important to correctly understand formaldehyde in foods.Aiming at the source of formaldehyde in foods from several aspects,formaldehyde content in food could been controlled by controlling endogenous formaldehyde in food,strengthening food hygiene supervision and management,reducing environmental pollution,and so on.Harm,source and preventive measures of formaldehyde in foods were summarized to better un
