低温冷榨核桃油工艺及主要压榨参数优化

Technology and Squeezing Parameters Optimization of Low-temperature and Cold-pressed Extraction of Walnut Oil

  • 摘要: 为得到高品质的核桃油,利用新疆“新新2”品种核桃进行核桃破壳、壳仁分离和低温螺旋冷榨工艺中试试验。对比研究了物料粒度对出油率的影响以及低温螺旋冷榨机压榨的主要工艺参数(出饼口直径和榨轴转速)对核桃油饼粕残油率和压榨效率的影响,得出核桃油冷榨关键技术的最佳工艺条件:核桃仁粒径10 mm、压榨温度35 ℃、入榨水分8%、榨轴转速60 r/min及出饼口直径6 mm,在此工艺条件下核桃油出油率可达40%。将冷榨装置与核桃破壳及壳仁分离生产线进行集成配套,形成低温冷榨核桃油生产线,为冷榨核桃油工业化生产提供坚实基础。

     

    Abstract: In order to obtain high quality walnut oil,pilot experiment of shell breaking,separation and low temperature screw cold-pressed technology was carried out by taking“Xinxin 2”as research object.Effect of material granularity on oil yield,and effect of squeezing parameters(outlet diameter and pressing shaft speed)of cold-pressed extraction technology on residual oil rate and crushing efficiency were studied,optimum process conditions were obtained as:walnut kernel grain size was 10 mm,pressing temperature was 35 ℃,squeeze moisture content was 8%,pressing shaft speed was 60 r/min and outlet diameter was 6 mm,oil extraction rate could reach 40% at optimum process conditions.Integrate cold pressed device with walnut shell breaking and shell kernel separation production line,that form a low-temperature and cold-pressed walnut oil production line,which could provide a solid foundation for industrial production of cold pressing walnut oil.
