Abstract:
Quality of rice during storage is affected by various internal and external factors.Internal factors include rice varieties and rice moisture content;external factors include temperature,humidity,and storage methods during storage.Studies have shown that,compared with storage conditions of low temperature and low humidity,under high temperature and high humidity storage conditions,fatty acid content and number of molds in rice grow faster,germination rate and moisture content decrease faster,and rate of rice aging and deterioration under high temperature accelerates.Effects of temperature,humidity,and rice moisture content during storage on rice quality were reviewed,and various quality changes of rice under different storage conditions,such as fatty acid content,amylose content,starch gelatinization characteristics,and quality characteristics,were analyzed.Existing rice storage technology was discussed,and differences of rice quality under different storage methods were analyzed.
