摘要: 鸡蛋富含人体所需的功能蛋白质和多肽,对人体健康非常有益。从鸡蛋的组成、生物活性成分、蛋白质分离及多肽制备3个方面对鸡蛋中蛋白质及其多肽的研究进行综述,旨在为鸡蛋功能蛋白及活性肽的深入研究提供参考,以期充分利用我国丰富的禽蛋资源、加快蛋品产业发展。Abstract: Egg is a rich source of functional proteins and polypeptides in human diet.It is very good for human health.Research status of egg proteins and polypeptides were reviewed from three aspects: composition of eggs,biological active ingredients,protein separation and polypeptide preparation,to provide reference for further research of functional proteins and polypeptides,make full use of China′s rich resources of eggs and speed up development of egg industry.
