Application of Pulsed Electric Field Technology in Food Processing and Preservation

  • 摘要: 高压脉冲电场处理是一种对细胞具有电穿孔作用的非热加工新技术,在食品加工及保藏领域中具有广泛的应用前景。主要概述了高压脉冲电场技术在天然活性成分提取、杀菌、降解有害物、钝化酶、提高食品品质、农产品干燥等多个方面的研究进展。重点对该领域的相关文献进行了全面的综述,指出高压脉冲电场存在的问题,并对其应用前景进行了展望,为高压脉冲电场技术在产业化应用方面提供一定的参考。

     

    Abstract: Pulsed electric field(PEF)processing is a new non-thermal processing technology with electroporation effect on cells,which has a wide application value in food processing and preservation.Progress of pulsed electric field in extraction of natural active components,sterilization,degradation of harmful substances,passivation of enzymes,improvement of food quality,drying and other aspects,were summarized.Relevant literature was reviewed,problems and prospects of pulsed electric field were prospected,which provided reference for industrial application of pulsed electric field.
