Abstract: Thorough research and comprehensive analysis were carried out regarding development status about market size, production capacity, research on processing technology, and development of processing equipment of potato quick frozen french fries．Results showed that demand for potato quick frozen french fries in domestic market has been increasing year by year, showing characteristics of diversified consumption methods and diverse consumption scenarios．Polarization of potato quick frozen french fries production enterprises was severe, and independent supporting capacity of medium-sized（3～5 t/h production capacity）production lines was relatively blank．Problems in processing of domestic potato quick frozen french fries were pointed out．Suggestions were put forward to focus on process research, strengthening development of core technical equipment, and improving supporting capacity of complete production lines．
