Abstract: Technical principle and parameters of heat pump-assisted solar drying equipment for fresh jujube were studied，9 air collectors and a heat pump with the power of 12 horsepower were determined.Drying rule of fresh jujube was explored by experiment，and it was divided into four stages：preheating stage，evaporation stage，drying completion stage and stage of dehumidification.Finally，drying curve of fresh jujube was drawn according to results and four experimental conclusions were obtained.
